Taxonomy provides a common language with which everybody in an organization can use to tag and organize content across SharePoint. It is a common vocabulary of potential tags for content. Taxonomy and metadata are important for describing the subject or the "Aboutness" of a piece of content. With properly tagged content, numerous key SharePoint features can be leveraged to make it easier for users to interact with content.
Taxonomy Driven Search Refiners
Basic SharePoint search refiners include "Result Type" (xls, ppt, doc, pdf, etc), "Modified Date", and "Author". These are administrative metadata values that offer limited value for a user who is looking to refine hundreds or thousands of search results based on a subject or topic he is interested in. This means content can be stored in a single location and can appear anywhere in a SharePoint site - all driven by tags. This is a powerful capability that relies on the term store. Managed Metadata Columns can be used to filter content within a library. In SharePoint, where a library or list may contain as many as 5,000 items, the ability to filter through these items with taxonomy based metadata is powerful.
Centrally Manage Pick Lists
Using the term store to manage pick lists centrally can significantly simplify change management. Imagine a scenario where a list of customers is maintained and used in a variety of SharePoint document libraries or lists. Without using the Managed Metadata Service, that picklist would need to be maintained in each location where that metadata field is established. This means that adding a new item to the list is an administrative headache and most likely the lists get out of synch. Conversely, if that list of customers is maintained in the Term Store with the Managed Metadata Service, changes to the list need only be made in the Term Store and that change is instantly available everywhere that term set is used. In addition, you can deploy synonyms, which is not possible with a choice column type.

Which versions of SharePoint support taxonomy?
Microsoft first supported taxonomy with the Managed Metadata Service and the Term Store in SharePoint 2010. Since then, the capability has persisted and been enhanced in SharePoint 2013, SharePoint 2016, and SharePoint Online as part of Office 365. Concurrent with the release of SharePoint 2016, Microsoft has added new support for Hybrid Taxonomy Scenarios for hybrid on-premise and in-cloud SharePoint implementations.
